20 iterations of the Terroir Symposium - what a milestone. It’s hard to put into words what this community has meant to me and to so many in hospitality. Built by the passionate and talented @arlenestein with a vision to bring together curious minds, bold ideas, and a shared love of food, drink and connection, Terroir has become so much more than an event — it has become a community that stretches across borders and around the world. I’ve been fortunate to be part of the journey in many ways: from the early days, to helping develop the rural retreat, hosting FAMs to Fogo, managing the program for several years, participating in talks in Europe and attending as a delegate these last few years. Every chapter has been meaningful in ways I’m still trying to fully articulate. Gozo is a Mediterranean island shaped by centuries of migration, conquest, trade, and agriculture, where Phoenician, Arab, Sicilian, French, and British influences still echo through its language, architecture, and cuisine. Ancient temples, limestone villages, fishing harbours, and terraced farmland reveal a landscape deeply connected to both history and foodways. Malta, but not the version you think you know. We began in Gozo at @leremita_bio_hotel easing into each day with poolside restorative pilates before setting out to experience the island from the inside. Time spent with Leanne from @tasteofgozo for a traditional lunch felt like being welcomed into the island’s rhythm — simple, seasonal, and deeply rooted in the island way of life. We even snuck in a potently delicious fruit grappa tasting! We enjoyed a leisurely late afternoon tasting with mother and son team at Tal-massar Winery — every moment felt deeply rooted, far from anything staged. A sunset @gozopicnic unfolded slowly — golden light, local bites, and the kind of quiet beauty you don’t stumble upon, you’re invited into. Then Comino — swimming in impossibly clear, crisp, turquoise water that hardly feels real. As we moved to the main island, staying at adorable @chapel5suites where mornings began again with rooftop pilates before we moved through Valletta — St. John’s Co-Cathedral, outdoor lunch on a cliff overlooking the sea at Ill Corsaro. We dined at Noni, which was a masterclass in modern Maltese cooking — refined, seasonal, and quietly rooted in tradition. A late outdoors afternoon blending into evening at @ta_cicivetta_farm felt like being welcomed into someone’s home — a traditional, homemade dinner shared with the warmest proprietors, Tony and Charlotte, where everything was as heartfelt as it was delicious. We delighted in learning the craft behind proper pastizzi with Elvin from @sphinxmalta Pastizzeria — the kind of experience you don’t find unless you know where to look. In Mdina, we explored St. Paul’s Catacombs, and stepped back in time with a traditional historical lunch at Inquisitor’s Palace — dishes inspired by how they once ate, centuries ago. Our final night unfolded as a light, traditional Maltese celebration — simple, beautiful, and deeply rooted in place. This was Malta through hidden doors — shaped by the people who live it.
